Cheese and Yogurt via Ultrafiltration

Cheese production via ultrafiltration (UF) involves concentrating milk, adding cultures, rennet, salt, or other additives to the retentate, which can then be directly packaged.

The result is a high-quality product with uniform texture and superior yield. Similarly, UF before and/or during fermentation enables the production of Greek-style yogurt with higher protein content, without the need for thickeners or additives — maintaining a clean and natural label.

New Applications: Protein Drinks and Functional Products

Lactic ultrafiltration is also used in the formulation of protein beverages and functional dairy products. It allows for the adjustment of solids and protein concentrations, improved stability, and the production of a nutrient-rich liquid base — ideal for high-value nutritional drinks.
